What a Health Food Blogger Eats for Breakfast
We don’t need to tell you that breakfast is the most important meal of the day. In this series, we ask some of Boston’s top doctors, fitness pros, and dietitians for a sneak peek into their kitchens so we can see what’s on their breakfast table.
Alexis Kornblum
Claim to fame: Kornblum is the woman behind the popular food and nutrition blog Lexi’s Clean Kitchen. Her cookbook of the same name drops in November.
What she ate: An over-easy egg, half an avocado, watermelon, homemade home fries (the recipe from which will be in her cookbook), coffee with collagen protein, and lemon water.
Why she chose it: “Breakfast is my fuel for the day, so I load it up with healthy fats and protein to fill me up and give me energy,” Kornblum says. “A typical breakfast is usually one or two pasture-raised organic eggs, some avocado, bacon or leftover home fries, and a few pieces of fresh fruit. I drizzle a little hot sauce or sriracha on the eggs, too. I also start each day with warm water and lemon, followed by coffee with collagen protein added to it. Collagen protein is super beneficial for bones and joints, skin health, balancing hormones, and more.”
