Light, fruity, and portable, popsicles have nudged out ice cream as our favorite summertime treat — especially now that local chefs have reinvented the kiddie staple. At Bina Osteria, chef Will Foden’s Aperol freeze pops riff on the classic Italian apéritif of sparkling wine splashed with the slightly bitter liqueur Aperol. He starts with a rhubarb and Aperol base laced with ginger, then layers on a combination of lime-infused simple syrup and prosecco. The result: a sweet, tart palate teaser to replace your sweating patio cocktail, served on a fragrant rosemary skewer. Think of it as summer on a stick.
