The Bancroft Opens in Burlington
The Bancroft, a modern American steakhouse and craft cocktail lounge, is now open in Burlington’s newly developed 3rd Ave. The kitchen, which officially opened its doors to the public on June 7, is helmed by James Beard-nominated chef Mario Capone, a protégé of the renowned Lydia Shire. Prior to opening The Bancroft, Capone partnered with Shire to open Scampo and Towne Stove and Spirits, both of which were named “Best New Restaurant” by Esquire in 2008 and 2011.
Capone’s latest project marries farm-to-table sensibilities and contemporary techniques that elevate it beyond the traditional white tablecloth steakhouse experience. In addition to Prime and Dry Aged beef prepared to order, guests can choose from high quality sourced fare like Red Wattle pork chops with parsnip puree, Bell & Evans organic chicken served with a Chantenay carrot flan, and Acquerello risotto with grilled lobster tail.
The Bancroft also has a full menu of creative salads and sides with a majority of the produce coming directly from Gibbet Hill Farm in Groton, Massachusetts, owned by the Webber Restaurant Group.
Beverage Director Dave Werthman conceived the extensive cocktail list, which includes a section of classics (Bijou, Tequila Sunrise) and original libations (the Queen Crimson mixes house rhubarb soda, Tito’s vodka, zucca, lime, grenadine and orange flower water). Werthman’s menu also offers a full range of fizzes, flips, and smashes.
The Bancroft’s bar and lounge are now open daily from 3 p.m. to 12:30 a.m. The dining room is open Sunday through Thursday from 5 p.m. to 10 p.m. and Fridays and Saturday from 5 p.m. to 11 p.m. A lunch menu will be implemented starting on June 23.
