Dig Inn Opens Soon in Downtown Crossing with Early Summer Fare

A leader in “farm-to-counter” fast-casual dining is about to double its Boston-area presence. Dig Inn opens its second local outpost in Downtown Crossing on Thursday, June 1.

The company, which was founded in 2011 by South Shore native Adam Eskin, operates 14 locations in New York, with two more on the way. Dig Inn opened a branch in Back Bay last July, its first outside NYC. Following the Downtown Crossing expansion, Dig Inn will debut inside the Prudential late this July, a company spokesperson says.

Dig Inn sources it build-your-own salad and grain-based “market bowls” with produce and protein from local farmers and producers. The chain rolls out a summer menu company-wide this Wednesday, May 24. The choices include farm greens and mint salad, or toasted quinoa with preserved lemon; with add-ons like tricolor carrots with rosewater vinaigrette, baby bok choy with yogurt ranch, red potato and string beans, charred chicken thigh, Happy Valley meatballs, and more. Plainville and Mapleline farms (both out of Hadley), Harvest Farm (South Deerfield), Happy Valley Meat (Brooklyn), and more Northeastern producers get a menu shoutout, as well as Niman Ranch, Counter Culture Coffee, and growers further afield.

Dig Inn is headed for Washington Street, between School and Water streets, across the street from a location of Luke’s Lobster. Both New York exports landed on an industry list of fast-casual concepts to watch earlier this year published by QSR Magazine.

Once it opens, Dig Inn will serve lunch and dinner daily from 10:30 a.m.-9 p.m. (11 a.m. on weekends).
