Row 34 and Boston Smoked Fish Co. Team Up on Sustainable Trout Pâté

Row 34 isn’t the only place to graze on seafood charcuterie this summer. Your own dining table could be, too.

Chef Jeremy Sewall is hoping fans of his restaurant’s smoked and cured boards will be into a new product he’s made with Boston Smoked Fish Co. Using some of the steelhead trout that Sewall and his team helped the University of New Hampshire raise this past winter, a new sustainable, smoked steelhead trout pâté is available to-go from the Boston Smoked Fish Co. stall at the Boston Public Market and a few other locations.

Row 34 always has spreadable, smoked trout on the menu to pair with snacks like crostini and pickles, but this limited-run batch is made using salmon-like, saltwater fish raised just offshore from the UNH Marine Research Pier in New Castle, N.H. Sewall, who is also a partner at Island Creek Oysters restaurants, Row 34 Portsmouth, and Les Sablons, partnered with UNH and N.H. Sea Grant to get exclusive access to this sustainable, local seafood. Over multiple site visits this past winter, the Row 34 team watched these non-native steelhead trout eggs hatch, then thrive in New Hampshire waters thanks to an innovative aquaculture system.

“The product is superb,” Sewall told Boston. “How they’re [raising the fish]—the density in the pen, the feed, the care they’re given—is evident in the final product, just like anything you grow.”

The chef suggests trawling the Boston Public Market for accompaniments to build a smoked and cured board at home, such as fresh produce from Corner Stalk, Siena, and Stillman’s farms and FoodCares Urban Market; Levend Bagels and cream cheese; local beer and wine, and more. Is it just us, or does a sustainable, New England-sourced spread sound like the perfect picnic this weekend?

Row 34 and Boston Smoked Fish Co.’s smoked trout pâté is available in limited quantities this summer, and is for sale now at Island Creek Oysters in Duxbury, Formaggio South End, and Sander’s Fish Market in Portsmouth, N.H.
