We don’t know how she does it all, but Pagu chef and owner Tracy Chang continues to run a successful Spanish-meets-Japanese restaurant in Cambridge while simultaneously growing numerous community-service initiatives with impacts locally and beyond. During the pandemic, for example, she cofounded several mutual aid organizations targeting food insecurity and also coauthored food-service health-and-safety protocols that went on to be used nationwide. And with her latest project — a roundtable dinner series featuring thought-provoking discussions on sustainability and more — we can only assume she’ll continue to change the world.
