Sycamore chefs David Punch and Daniel Scott showcase a passion for ramen at their new “East Asian soul food” spot in Newton. Unlike other porcine standard-bearers in the area, paitan chicken ramen is the star here. Steeped in a collagen-rich avian stock, the noodles are accompanied by shaved cabbage and char siu chicken thigh, and finished with the pièce de résistance—an unctuous dollop of schmaltz.
