Recipe: Apple Spice Quinoa Granola

Next time you’re craving a slice of warm apple pie, save yourself hours of effort—and hundreds of calories—by instead making this healthy granola recipe brimming with apple spice flavor. It’s full of fragrant cinnamon, crunchy almonds, and chewy raisins, and quinoa gives it an extra nutritional boost, packing in plenty of protein and fiber.

The granola is a delicious treat by itself, or as a topping for your favorite yogurt and smoothies.

Ingredients

3 cups rolled oats
1/4 cup quinoa
1/2 cup chopped almonds
1/2 cup raisins
1/2 cup unsweetened applesauce
1 tsp vanilla
1/4 cup maple syrup
2 tbs coconut oil
2 tsp cinnamon
1 tsp allspice

Directions

Preheat the oven to 325 degrees. In a bowl, combine the oats, quinoa, almonds, cinnamon, and allspice. Mix well. In a separate bowl, whisk together the applesauce, vanilla, maple syrup, and coconut oil. Add the wet ingredients to the dry ingredients and stir, ensuring that the oats are completely coated.

Pour the granola onto a baking sheet lined with parchment paper or aluminum foil. Bake for 30 to 40 minutes, or until the oats are golden brown. Once cool, stir in the raisins. Store in an airtight container.
