Seven Healthy Meals That Don’t Require Any Cooking
Step away from the stove and don't even think about turning on the oven, especially when it's hot and humid outside. Instead, whip up these no-cook meals.
After a long winter and pretty terrible spring, we’re grateful that the warm weather is here. Except for the days when it’s 80 degrees and humid and we have to come home after work and cook dinner over a hot stove. Well, say goodbye to that. To save you the sweat, we put together this list of healthy no-cook meals. Other great options for making summertime meals include throwing things in the slow cooker or Instant Pot, and obviously firing up the grill.
1. Hummus Collard Wraps
Via Eating Bird Food
Great as a light dinner or lunch, these low-carb collard wraps can be made with any vegetables and hummus of your choice. Be careful not to overstuff the wraps or it’ll be difficult to keep them together.
2. Chopped Italian Salad
Via Lemon Tree Dwelling
This salad calls for chicken and bacon, but you can use whatever leftover meat you have in your fridge. Dress the entire salad if serving a crowd, but if you’re only having a serving dress it individually to avoid soggy leftovers.
3. Lemon Tuna Salad Pita
Via PopSugar
This lighter tuna salad recipe doesn’t use any mayonnaise, but if you want some creaminess try adding Greek yogurt or mashed avocado. One can of tuna should make two pitas.
4. Shrimp Ceviche Stuffed Avocados
Via Heather Christo
This shrimp ceviche, marinated in lime juice, takes only 10 minutes to prepare. If you want to save dishes and have a natural bowl for your ceviche, don’t remove the avocado skin.
5. Three Bean Salad
Via Tasty.co
Beans, loaded with protein and fiber, are also very cheap, making for an inexpensive and filling dinner. You can also top the salad with a sprinkle of cheese or some diced avocado.
6. No Noodle Pad Thai
Via Cookie and Kate
Daikon radish, carrot, and zucchini serve as the “noodles” for this Pad Thai. Feel free to swap the tofu for shrimp or chicken if you prefer.
7. Ginger Tofu Watermelon Bowl Salad
Via PopSugar
If possible, use the smaller watermelons available in the grocery store. If you don’t like pine nuts, peanuts or cashews would be great additions to this salad.
