Mother Juice Is Planting Some Roots
It started how many new ventures begin: through Kickstarter. After the successful funding of their first venture—a juice truck dubbed, Mother Juice—Ellen Fitzgerald and Laura Baldini knew they wanted to take their “garden to glass” approach to juice and plant some roots.
Mother Juice’s new brick and mortar shop at will be located at 625 West Kendall in Cambridge, and it’s slated to open in late July. The spot will continue to offer its distinct cold-pressed juices and raw vegan snacks made from local, organic ingredients. In addition to made-to-order juices, Mother Juice will also offer juice delivery, custom juice cleanses, and special tastings. We’re told that cocktail pairings may be on the agenda as well.
One unique element to Mother Juice is that the pulp leftover from the fruits and vegetables is used to make baked goods, fruit leathers, fresh fruit sorbets, and popsicles. “We are so excited to open up in Cambridge, in a neighborhood that is so cutting edge and progressive about everything from technology to food supply,” Baldini says. “We feel that Kendall is the perfect spot to lay down our roots as a brick and mortar shop for fresh cold-pressed juices and raw vegan snacks.”
Mother Juice’s commitment to local and organic farmers will continue in the new spot, but it will also highlight the “tech-forward personality” of its Kendall Square neighborhood. The space will be outfitted with reclaimed wood, a wire wall system for live plants and herbs, ball jar lights, pipe shelving, mint green accents, and more. There will also be indoor and outdoor seating.
“Our menu is a work in progress that continually evolves to feature the most healthful and flavorful ingredients of the day,” Fitzgerald says. “We offer a nutritious and delicious addition to Cambridge’s locavore movement, connecting Bostonians to their neighborhood farmers with every juice we make.”
