Breakfast of Champions at Union Square Donuts in Somerville

Behold the glory of Union Square Donuts. The new Somerville shop is a collaboration between Heather Schmidt—who has crafted pastries at Clear Flour Bread, Radius, and Rialto—and Josh Danoff, of the kombucha-and-popsicle business Culinary Cruisers.

“I am excited about doing doughnuts because they’re nostalgic and remind you of home,” Schmidt says, “but you can also create these really interesting, beautiful flavors.” The pastry chef has dreamt up inspired combinations like maple-bacon, honey-almond, and hibiscus-cherry for her glazed confections. And for those who prefer the leavened variety’s denser cousins? “Cake doughnuts will be in our future,” Schmidt says, “and I know they are going to be good.”
