Sandrine’s Bistro to Undergo Major Changes

Sandrine’s Bistro in Cambridge has announced that partner and chef Raymond Ost has decided to move on from the 18-year-old bistro. Starting today, Gwen Trost and Amy Nomejko have assumed ownership and are launching a new modern French menu and an expanded bar.
Matthew Stogryn takes over as Sandrine’s new executive chef, and has restyled the menu “with cutting- edge methods and a greater emphasis on the ingredients, particularly those locally and sustainably grown.” Stogryn was previously executive chef 11 North in Edgartown and a chef de cuisine at Tremont 647.
Michael Betts, who worked under Ken Oringer at Clio, has also been hired as a consulting chef during the transition.
“Change creates opportunity and Matthew and Michael are planning to inject a fresh new air of hip, sexy, modern cuisine while retaining the high level of quality and comfortable atmosphere our loyal customers have come to expect,” said Trost via a press release. “It’s going to be exciting to see what they deliver.”
In addition to the new dinner menu, Trost says she is planning on introducing a new bar menu and “incentives at the bar.”
