“O Oysters,” said the Carpenter,
“You’ve had a pleasant run!
Shall we be trotting home again?”
But answer came there none—
And this was scarcely odd, because
They’d eaten every one.
— “The Walrus and The Carpenter,” Lewis Carroll
Here we are, in the golden age of the oyster: According to Island Creek Oysters founder and owner Skip Bennett, we have entered “America’s oyster renaissance,” a time when bivalves are bountiful and demand is high.
August 5 marks National Oyster Day—which might be a curious thing to celebrate in the month of August, considering that it’s not a month with “R” in its name. Traditionally, that was considered a time for oyster seekers to steer clear. But you can rest easy: That old chestnut only applies to wild-caught oysters, not the farmed (and rigorously tested) oysters that appear in restaurants.
So let’s celebrate with some $1 oysters. Where can you find yours? Here are some of the best dollar-oyster deals in town (and beyond), from 25 of our favorite restaurants.
