Barry Maiden, David Bazirgan to Cook at Tavern Road’s Chef’s Studio

Louis DiBiccari will be joined by the chef at the late Hungry Mother, former Barbara Lynch Gruppo stars, and Bondir Cambridge's chef de cuisine this year.

Tavern Road has announced its next few Chef’s Studio dinners, and if you still haven’t quite gotten over the loss of Hungry Mother, listen up. James Beard Award-winning chef Barry Maiden is the guest for a June dinner.

Also slated to cook alongside Tavern Road chef and owner Louis DiBiccari in the coming months are Colin Lynch, the former Barbara Lynch Gruppo chef opening Bar Mezzana this year; Bondir Cambridge’s chef de cuisine Brendan Joy; and David Bazirgan, a Newburyport native who’s made a name for himself in San Francisco, with his sultry small plates bar Dirty Habit.

DiBiccari resurrected the Chef’s Studio at his three-year-old Tavern Road in February, with Gabriel Bremer preparing a Uruguayan-inspired menu preview of his forthcoming La Bodega by Salts. The series actually began in 2014, when DiBiccari was thinking of ways to make better use of the small, neighboring space, then the TR Street Foods lunch spot.

“There are so many guys out there who aren’t cooking [right now], whose food we miss,” DiBiccari said this winter. “We can create an atmosphere where [chefs] can reintroduce their cuisine, or introduce new cuisine going forward, or whatever they’re into now. Let’s have a night where we have some fun.”

Maiden, named Best Chef: Northeast in 2015, was executive chef at dearly departed Hungry Mother, as well as its sister restaurant State Park. After seven years within the group, Maiden announced his departure to pursue other restaurant projects. Look forward to a peek at what he’s been up to when he visits the Fort Point kitchen.

At this month Chef’s Studio, Lynch will preview the coastal Italian concept he’s opening in the South End later this year with fellow Gruppo alumni, Jefferson Macklin and Heather Kennaway Lynch (who also happens to be his wife).

In May, it’s Joy’s turn. In addition to creating the farm-to-table menus at Bondir, Joy and his wife, chef Cassidy Salus, are behind a hyper-local, modern Italian pop-up called Verdure.

In July, Bazirgan brings a taste of the West Coast back to Boston. Bazirgan studied at the Cambridge School of Culinary Arts, and went on to acclaimed Boston-area kitchens including Salamander by Stan Frankenthaler, and Olives with Todd English. Before relocating to San Francisco, he was also a protégé of Barbara Lynch. He helped develop the seven- and nine-course tasting menus at No. 9 Park as its chef de cuisine.

The nights at Tavern Road are a chance for chefs to get together and learn from each other—and it’s also an opportunity for you to give them feedback on their new ideas.
